Diet- Are You Going Green? or Not Your Mother’s Diet (or Ancestors’ Diet)
The inside story is that Christopher Columbus did this for Europe in the 1490’s. He brought not gold, but the wealth of greens. Here is a list of the foods that were available after his voyages to the New World. Checking the food historians’ literature, highlights Columbus’ agricultural contributions to the larders of the old world with yams, potatoes, pineapple, peppers, cocoa, vanilla, papaya, squash, corn, tomatoes and the turkey, a bird unknown to Europe and Asia. However, these foods still took a period of time to become a part of their diet. Food changes began with Columbus’s return but not until the 15th and 16th centuries did these foods become common.
What one member of Columbus’s crew might have written is, “Wednesday, October 10th, the 34th day at sea 1492. Today when I started my day watch, the steward, prepared a delicious meal. He boiled salt cod which he had soaked for a couple of days. I know it came from the cold waters of the North Sea, not from Portugal or Spain, because it was less fleshy but more flavorful.
After a few minutes, he lifted it from the boiling water, removed the bones and skin, placed it in the communal wooden bowl, broke it into small pieces with his hands and while still warm, drizzled it with oil from Andalucia. The common stories told that Viking sailors in Lofoten, Iceland, a few years ago raved about biting chunks of uncooked dry salt cod with their teeth and chewing them for a very long time.” This single food diet led to nutritional deficiencies and short life spans.
Europe in the Middle Ages suffered from nutritional lack with their limited food choices. While the Black Death, also known as the Black Plague, the Great Mortality and the Pestilence, was the specific incidence of plague that struck the undernourished Europeans in the mid-14th century before Columbus brought back the wealth in greens to improve their health.
Now fast forward in the 21st century (5 centuries later) we are learning to again to go green. Our prevalent health challenges looming in your future are High Blood Pressure, Heart Disease, Diabetes, Cancer, & Obesity. Today’s fear of death leads many to reassess their way of living, and what they are eating and drinking. Thank goodness those that are able to change are seeing rapidly improved health results.
The ‘Going Green Diet’ means eating foods that are good for you and the Earth. It’s not about sacrificing foods you love, or eating all raw veggies you grew in your own yard. It’s about eating a healthy, diversified diet and getting to know your food. Everyone gets to choose their menu and everyone gets there through their own culinary adventure. Who wants to go back in time and only eat salt cod again?
For my tastes, I ask, ”Who wants to keep eating fast foods when you can realize that you have been commercially studied and trained like animals to love junky fast-food? However, when you become more conscious of your health, you might realize that other healthier choices are tasty too. Why not take control of your health and your life by choosing to make wiser food choices? “
